Under the banner of Tacos Cucuy, chef Paul Morales produces seasonal tacos, tetelas, tortas, and tlayudas using heirloom grain masa. In 2023, the concept will evolve into a brick-and-mortar with an expanded menu and a regional approach to cuisine.
Morales is looking for community support in developing La Cura Carnes Especiales — a Tex-Mexvcharcuterie program fusing classical French techniques with Southwestern flavor profiles.
