Farmer’s market favorite Ninja Pig creates unique sandwiches and tacos using locally sourced pecan-smoked pork. Helmed by Nikki Todd and James Ballantine, the food stand specializes in innovative globally inspired preparations using vegetables sourced from area farms and mindful of ingredient sensitivities.
The Alliance grant will help the business purchase a commercial tortilla press, an important step towards the goal of purchasing a mobile food truck and building a dedicated gluten-, corn-, and soy-free commercial facility.
